Bang bang chicken noodles
Serves 2
Ingredients
- 2 chicken breast
- Dollop of peanut butter (100g)
- Tbsp sweet chilli sauce
- tsp black pepper
- 3 tbsps seasame oil
- Tbsp vegetable oil
- Ribbon rice noodles
- 1 cos lettuce
- 1 carrot
- Small handful of toasted seasame seeds
- 1 lime
Method
- Bring a pan of salted water to the boil and add the chicken breasts
- Reduce to a gentle simmer and cook for about 10 minutes, until the chicken is cooked right through
- Whisk the peanut butter, sweet chilli sauce, black pepper, sesame oil and vegetable oil together
- Wash and shred the lettuce, then peel and grate the carrot
- Bash the cooked chicken lightly with a rolling pin until it begins to shred, then rip it into strips along the natural breaks
- Heat a drop of vegetable oil in a pan and add the noodles. Once hot, stir through the chicken and pour in the sauce, then continue to cook until heated through.
- Remove the pan from the heat. Stir through the shredded lettuce, grated carrot and sesame seeds.
- Squeeze over a little lime juice and serve, sprinkled with a few extra sesame seeds and finished with a wedge of lime.
