Chicken & halloumi loaded potatoes 🥔🐓
Ingredients
- 1 tsp chilli flakes
- 2 tsp paprika
- 2 tsp oregano
- 3 garlic cloves / 3 tsp easy garlic
- Juice of 1 lemon
- Salt and pepper to taste
- Potatoes
- Chicken breast
- Halloumi
- Chilli jam
- Nando's perinase
- Mixed peppers
- Red onion
- Mozzarella
Method
- Peel and cube your potatoes into 1/2cm sized cubes
- Season the potatoes with salt, pepper, paprika and oregano
- Stick your potatoes into the oven or air fryer and while they're crisping up we can prep the rest
- Dice your peppers and red onion
- Slice your chicken breast into cubes
- Add some olive oil to a hot pan and add your chicken and peppers
- Fry until your chicken is golden brown
- Add your red onions
- Now add your nandos seasoning to it all: your garlic, paprika, chili flakes, oregano and lemon juice and give that all a good mix
- Slice your halloumi and fry it off
- To plate up add a layer of your fried potatoes and on top chuck your chicken and pepper mixture
- Top with grated mozzerella, halloumi and chilli jam / perinase
