Chicken & halloumi loaded potatoes 🥔🐓

Ingredients

  • 1 tsp chilli flakes
  • 2 tsp paprika
  • 2 tsp oregano
  • 3 garlic cloves / 3 tsp easy garlic
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Potatoes
  • Chicken breast
  • Halloumi
  • Chilli jam
  • Nando's perinase
  • Mixed peppers
  • Red onion
  • Mozzarella

Method

  1. Peel and cube your potatoes into 1/2cm sized cubes
  2. Season the potatoes with salt, pepper, paprika and oregano 
  3. Stick your potatoes into the oven or air fryer and while they're crisping up we can prep the rest
  4. Dice your peppers and red onion
  5. Slice your chicken breast into cubes
  6. Add some olive oil to a hot pan and add your chicken and peppers
  7. Fry until your chicken is golden brown 
  8. Add your red onions
  9. Now add your nandos seasoning to it all: your garlic, paprika, chili flakes, oregano and lemon juice and give that all a good mix
  10. Slice your halloumi and fry it off
  11. To plate up add a layer of your fried potatoes and on top chuck your chicken and pepper mixture
  12. Top with grated mozzerella, halloumi and chilli jam / perinase
