Method

  1. In a bowl, mix the flour and salt. In a saucepan, heat the butter, lard, and water until melted (but not boiling).

  2. Using a stand mixer with a beater attachment, slowly add the hot liquid to the flour until the dough comes together.

  3. Lightly flour a work surface and knead the dough for 2 minutes until smooth. Wrap in cling film and refrigerate until completely cold.
